Ok, it's been a few weeks since I've done a recipe grab & meal planning day... So let's check out a few new recipes.  It's still crazy hot here in Southern Utah, so even though some of the soups and stews caught my eye, I couldn't imagine actually eating them!  So I'm focusing on salads this week.  I love having a salad-meal.  Add meat or other proteins, and salads are very filling!  Here are a few of my staples:

The BLT Salad

Just like it sounds, you're making this salad like a bacon, lettuce, and tomato sandwich, just without the bread!  Choose your favorite salad greens, and top it with:

  • Bacon, of course!  Cook up as much bacon as you like, and crumble it over your greens.
  • Tomato - chop it up and stir it in.
  • Avocado - a great keto staple, and it goes great with a BLT.  
  • Aioli - I have a chipotle aioli in the fridge which I think goes great on my BLT salad, but feel free to use any type of low-carb dressing or sauce to compliment your BLT.
Cheeseburger Salad

Another of my favorites... Brainstorm what you love on your burger, and then put it in the salad!  I use a pound of hamburger to form 4 patties and cook those up.  (1 burger patty per serving).  Use plenty of salad greens as your base, and then add:
  • Onion, diced
  • Cheese, shredded/crumbled
  • Pickles, sliced
  • Olives, sliced
  • Tomato, diced
  • JalapeƱos 
  • Dressing in the blender: 1/2 cup mayo, 2 tsp. mustard, 1 tsp vinegar, 2 T. diced dill pickles, add paprika and keto-friendly powdered sweetener to taste.  Thin with water or oil as needed.
Cobb Salad

A classic!  And perfect for keto.  Start with your favorite salad greens, and then go wild! 
  • Hard boiled egg
  • Grilled chicken
  • Ham
  • Bacon
  • Cheese
  • Tomato
  • Cucumber 
  • Avocado
  • Blue cheese crumbles
  • Red Wine Vinaigrette 
Italian Salad

As usual, start with plenty of salad greens!  Then add any of the following ingredients that sound good to you:
  • Salami
  • Pepperoni
  • Proscuitto 
  • Mozzarella balls
  • Grated parmesan
  • Grape tomatoes
  • Pepperoncini peppers 
  • Kalamata olives
  • Artichoke hearts
  • Fresh basil
  • Dressing: blend olive oil with white wine vinegar, add salt and pepper to taste
Keto Chicken Salad - great for making lettuce wraps, or just serve a big scoop on top of salad greens.

Broccoli & Bacon salad - For something a little different, skip the salad greens and use broccoli for this one!  I'm thinking I might try it with chopped chicken as well.  

Ok, I think I have enough salads to get me through the week!  I'll be revisiting some of my favorite staples, as well as trying a couple new recipes.  Salads are great in this summer heat, and with so many options I never get bored with them.
